Glycemic Index and Glycemic Load: Why are potatoes worse than sugar?

The idea of “Simple” versus “Complex” carbohydrates has been replaced by the concepts of glycemic indesx, which measures how rapidly a food raises blood sugar, and glycemic load, which measures the impact considering quantity. Glycemic index can be reduced by consuming foods with fats or proteins which buffer the increase in blood sugar but all foods within the class will still have their relative value. So sweet potatos are better than Idaho russets and chana dahl is better than chick peas. But there are surprises- Idaho russet potatoes are worse than pure sugar in raising blood sugar. All people, not just diabetics,despite varrying levels of carbohydrate tolerance, will do better to eat lower on the glycemic index scale.
